The Rooftop Smokehouse celebrate La Mercè with an homage to the storied combination of the gilda – a pincho made from anchovies, olive and chili – with vermouth. The chefs there know a thing or two about the alchemy of smoked food and will be serving up smoked gildas together with brined and fermented goodies, all accompanied by locally made vermouth.
