A new project created to publicise its philosophy regarding the sea and the products it offers us, this restaurant is based on examining and updating ancestral techniques used for the preparation and conservation of fish.To prepare, everyone behind Fishølogy has studied the history of preparing fish - from ancient times to present day! They’ve got to grips with all the necessary techniques for creating the perfect fish dish including preserving, salting, maturing, pickling and smoking. And of course, they use the highest-quality, fresh and sustainably-produced fish they can get their hands on.
Each fish dish on the menu is made with their very own approaches that have been experimented with in the restaurant's laboratory. So whether you fancy something traditional or new, they’ve got you covered. What’s more, they produce their very own artisanal Vermouth made from a special mix of botanicals, flowers and spices.
